Ham and Piccalilli Sandwiches

A crowd pleaser if ever there was one! This tangy sandwich will make a tasty and colourful addition to your party buffet.

Serves 6

  • 12 slices white bread
  • 50g butter, softened
  • 300g thickly sliced honey roast ham
  • 6 tbsp piccalilli

Spread half the slices of bread with butter. Top with the ham then the piccalilli.

Place the other slices of bread, buttered side down on top then cut the sandwiches in half.

Trout and Watercress Sandwiches

An elegant sandwich which is simplicity itself to prepare – high wow factor but low effort.

Serves 6

  • 4 large trout fillets
  • 75g butter, softened
  • 50g bag watercress
  • ground black pepper
  • 12 slices wholemeal sliced bread

Place the trout in a covered plate in the microwave and cook for 3-4 minutes until it flakes easily (or place in a greased baking tray, covered with buttered baking parchment and bake at 180°C, 160°C fan, gas 4 for 10 mins until it flakes easily). Allow to cool completely.

Place the butter in a food processor with the watercress (remove any tough stems). Whizz until smooth, then spread the butter over all the slices of bread. Top 6 slices with the cold cooked trout and season with black pepper. Top with the other slices of bread buttered side down. Cut in half or in triangles.

Thai Prawn Cocktail Sandwiches

This delicious sandwich recipe is quick to make and is a perfect way to ring the changes for an old favourite filling.

Serves 6

  • 12 slices white or brown bread
  • 50g butter, softened
  • 6 tbsp mayonnaise
  • grated zest 1 lemon
  • 3 tbsp sweet chilli sauce
  • 250g cooked prawns
  • 2 little gem lettuces

Spread half the slices of bread with butter. Mix the mayonnaise with the lemon zest, and sweet chilli sauce and spread over the other 6 slices.

Lay 4 slices of bread over the base of a 900ml/2pt shallow ovenproof dish. Arrange the remaining slices of bread on top, overlapping them slightly. Scatter over the raisins, zest and juice. Pour over the cream mixture and leave to soak for 15 mins.

Top with the prawns and cover with lettuce. Place the other slices of bread, buttered side down on top then cut the sandwiches in half.
